Chicken Parmesan Sandwiches

Ingredients
4 Wonder Classic Buns
4 Chicken cutlets
1/2 cup all-purpose flour
1/2 cup Italian bread crumbs
2 eggs
2 tablespoons whole milk
1 teaspoon garlic powder
1 cup marinara sauce
1/2 cup shredded mozzarella
1/2 cup shredded Parmesan
4 large basil leaves (or 8 smaller leaves)
Vegetable Oil for frying
Salt and Pepper
Directions
Using three separate bowls, add flour to one, bread crumbs to the next. To the third bowl, add the eggs, milk, garlic powder, a pinch of salt and pepper and whisk to mix evenly.
Using tongs, dredge one of the chicken cutlets lightly in the flour, dip into the egg mixture and then coat with the bread crumbs. Repeat until all cutlets are breaded.
In a deep sauté pan, over medium-high heat, add enough vegetable oil to shallow fry. Cook the chicken cutlets in the oil for 2-3 minutes per side or until golden brown and crispy. Remove the cutlets from the oil and place them onto a sheet tray.
Heat the marinara sauce in a small saucepot.
Add a few tablespoons of marinara sauce over the tops of each cutlet, then add one large basil leaf (or 2 smaller leaves) over the top. Cover with some of the shredded parmesan and shredded mozzarella cheese.
Broil the cutlets for 3-4 minutes or until the cheese is melted and slightly golden.
To build the sandwich, add the desired amount of the marinara sauce to the bottom bun and then the chicken cutlet over the top. Add the top bun and serve immediately.
